I’ve always loved this recipe. It is so amazing yet so easy to make. you can have it as an appetizer or even bring it to a potluck… if you do just at the “stuff” on the bread when you get there. Or if you are lazy you can buy packaged bruschetta lol. Then all you need is to put it on bread and stick it in the oven. To make it fresh and oh so delicious here it is…
1-1/4 large tomatoes, coarsely chopped
3/8 sweet onion, chopped
1 tablespoon and 1 teaspoon olive oil
2 teaspoons chopped fresh oregano
3/4 teaspoon chopped fresh basil
1-1/4 teaspoons chopped fresh parsley
3/8 (1 pound) loaf Italian bread, cut into 1 inch slices
2 tablespoons and 2 teaspoons freshly grated Parmesan cheese
Preheat oven to 400 degrees F (200 degrees C).
In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with Parmesan.
Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving.
